Japanese curry

Japanese curry sometimes referred to as "wafuu curry", although similar to curry from other countries has a different taste and texture from curries that hail from India or other South-East Asian countries. Usually a roux is used as a base to give Japanese curry its texture, which is notably thicker than other curries.

A manufactured "roux" popularized by S&B Foods of Japan simplify curry cooking at home by eliminating the need to make broth. The product is usually labeled as sauce mix or Japanese curry mix. Homemade curry recipes in Japan vary widely and frequently include ingredients like carrots, potatoes, onion, apple, and honey.

Curry houses in Japan usually serve curry made with chicken, beef or shrimp alongside plain white rice (カレーライス, karē raisu). Some accompaniments include fried egg, grilled sausage, toast, breaded pork chop (katsu-curry) and pickled onions.
