Yeasts are chosen as model eucaryotes. Biologists are focusing on one type of yeasts: Saccharomyces cerevisiae. This one is used for brewing beer and baking bread.

'Saccharo' and 'myces' derived from Greek, means 'sugar' and 'fungus' respectively. 'Cerevisiae' derived from Latin, means 'of beer'.
