The aidan fruit, also called aridan, uyayak, kyoho, or prekese is the product of Tetrapleura tetraptera. It is native to West Africa, where it is used as a flavoring.[1]
Characteristics
[edit | edit source]The fruit's pod is dark and has four wings or ridges.[2] Two of these wings are woody and inedible, and two are filled with an aromatic pulp described as toffee-like in flavor.[1][2][3] The seeds inside the pod are not typically eaten.[1]
Use
[edit | edit source]The aromatic pulp of the dried pod is used as a spice in cooking.[1][2][3] The seeds may on occasion be fermented and used.[2]
