Akpi, also called njangsa/djansang and other names, is a tropical African tree (Ricinodendron heudelotii) whose seeds are used in cooking.

Characteristics

[edit | edit source]

Akpi seeds are brown to black in color and aromatic.[1]

The seeds are typically ground and used to flavor and thicken dishes.[1][2] If dried, they should be prepared using a moist cooking method.
