Editan is a leafy vegetable with the scientific name Lasianthera africana.[1]

Characteristics

Editan is a green leaf with an elongated almond-like shape. It is very bitter in flavor.[2]

The leaf is available both fresh and dried.[2]

Preparation

Because of the intense bitterness, editan needs to be prepared before use. Typically, the leaves are very finely chopped or sliced, then soaked and rinsed with water to remove excess bitterness.[2] This process is repeated, squeezing the water out each time,[3] until the leaves are palatable. Sometimes salt or an alkaline substance like potash is added during the soaking process.[3][4]

Editan is used in Nigerian cuisine, especially in editan soup.
