Ensalada Rusa, which translates into "Russian Salad" is a simple potato salad that is a staple in Uruguayan tables. It is served with "asado" in restaurants.
Ingredients

- 1 cup fresh peas
- 2 carrots, diced
- ½–¾ cup mayonnaise
- Salt to taste
- Pepper to taste
Procedure

- Allow to cool completely.
- Dress with mayonnaise, salt, and pepper.
- Serve as a side dish.
