Fankasau is a traditional Hausa fritter, common in northern Nigeria.
Ingredients
[edit | edit source]- 4 cups wheat flour
- 2 cups all-purpose flour
- 1 tbsp instant yeast
- Water
- ½ cup potash water (kanwa)
- Sugar
- 1 egg
- 1 tbsp baking powder
- Salt
- Vegetable oil for frying

- Wooden spoon

Procedure
[edit | edit source]- Combine the flours and yeast in a bowl. Mix in enough water to form a thick, sticky dough.
- Cover the dough and allow to rise for about 1 hour until doubled.
- Add the potash water, baking powder, sugar, and salt to the dough. Mix well until thoroughly combined.
- Divide the dough into suitably sized portions. Dip your hands in oil, and shape the dough portions into rounds with a hole in the center.
- Heat a pot of oil. Working in batches, add the dough and deep fry until golden brown on all sides.
- Remove the fritters, and drain any excess oil.
- Serve fresh.
