Footi can be best described as a flavorful stew abundant in aubergines and tomatoes. It closely resembles a chili and could be alternatively referred to as "Chilli con Berenjena." This recipe is entirely plant-based, emphasizing a generous amount of vegetables while incorporating beans for a natural protein boost. Traditionally, this delectable dish is served by pouring it over rice. However, you can also enjoy it alongside a Guinean swallow called fufu.
Ingredients

- Onions, diced
- Habanero chile, deseeded and minced
- Aubergines, chopped
- Okra, diced
- Salt to taste
- Pepper to taste
- Vegetable stock
- Pomodoro sauce
- Mixed dried beans, soaked
Procedure
[edit | edit source]- Heat some oil in a large pot over medium heat. Add the onions and chiles, and sauté for a few minutes.
- Add the aubergines and okra. Cook for a few more minutes, stirring occasionally.
- Add the remaining ingredients, and simmer until the aubergines are soft and thoroughly cooked, which should take approximately 30–40 minutes.
- Serve over wholegrain rice.
