Gurudi, also called gurundi, is a Nigerian coconut biscuit made from finely-grated coconut, cassava starch, and sugar.

[edit | edit source]- Gently crack open the coconut, and separate the meat from the shell. Use a grater or food processor to shred the coconut.
- Combine the grated coconut, sugar, cassava starch, and nutmeg. Stir in water until it forms a dough ball.
- Roll out the dough until thin. Cut out square biscuits, and transfer them to a buttered baking tray.
- Bake the biscuits for about 20–25 minutes at 150°C (300°F) until golden brown and crisped.
- Remove the biscuits from the oven, and let cool.
Notes, tips, and variations
[edit | edit source]- In the absence of cassava starch, potato starch or corn starch can be used as a substitute.
- If desired, you can also use pre-shredded coconut.
