Ingredients

- 1 can of tomato beans
- 1 pack (150 g) of bacon
- 4 slices of whole-wheat bread
- Margarine
- 4 eggs
- Pickled jalapenos (the kind you have on tacos)
- Shredded cheese
Procedure

[edit | edit source]- Chop and fry the onions, then set aside.
- Warm the tomato beans over medium heat.
- Fry the bacon and set it aside. Reserve the bacon grease.
Eggs
[edit | edit source]- Slice the bread and apply margarine generously.
- Heat a frying pan with the bacon grease.
- Start frying 2 eggs. Do not crack the yolk.
- When the eggs are nearly done, draw aside the egg white so the yolk is clear.
- Chop the pickled jalapeƱos and spread them over the eggs. Add some of the pickle juice as well.
- Sprinkle some cheese over the eggs.
- Put a lid over the frying pan and let the cheese melt.
- Serve the eggs on the bread with the onions, tomato beans, and bacon.
