Kala is a great and mouth watering snack, similar to Nigerian puff-puff.
Ingredients
[edit | edit source]- 1 tablespoon salt or to taste
- 1 cup sugar
- 3–4 cups warm water
- 4½ teaspoon active dry yeast
- 6–7 cups all purpose flour
- Vegetable oil for deep frying
Procedure
[edit | edit source]- Combine the salt, sugar, warm water, and yeast in a medium-size bowl. Set aside for about 5–7 minutes.
- Add the flour and mix very well; if you have a mixer, use it.
- Let the mixture rise for approximately 2 hours.
- Pour the vegetable oil in a large saucepan until it reaches at least 5 cm deep—too little oil will result in flatter fritter. Heat over medium heat—a drop of batter should rise to the surface and start sizzling.
- Use a spoon or your hands to drop dollops of batter into the hot oil. Fry for a few minutes until golden brown on one side. Turn the ball to the other side and fry until golden brown.
- Use a large perforated spoon to remove the fritters and place them on paper towels to soak up excess oil.
- If desired, roll the finished product in powdered sugar or table sugar.
Tips and Variations
[edit | edit source]- If you want to get crunchy kala, do not overcrowd the frying pan while frying.
- You can cut back on the salt as desired.
- This delicious snack can be eaten for breakfast, during relaxation, and even as a side dish.
