Kekefia is a plantain porridge popular among southern Nigerians, especially the Ijaw people. It is a trending food in Nigeria, and it is tasty, delicious, and easy to cook.
Ingredients
[edit | edit source]- Unripe plantain, peeled, washed, and diced
- Fresh pepper, blended to a paste
- Ground crayfish
- Dried fish, shredded into pieces
- 1 handful of scent leaves
- Palm oil
- Onions, diced
- Periwinkles
- Salt
- Seasoning/stock cubes
Procedure
[edit | edit source]- Add the diced plantain to a pot, and cover with water. Bring to a boil, and simmer until cooked.
- Stir in the pepper paste, ground crayfish, and shredded dried fish.
- Add scent leaves, palm oil, diced onions, periwinkles, and salt. Cook without stirring for about 10 minutes.
- Stir and simmer over low heat.
