Nem is a Vietnamese term referring generally to a variety of rolls, usually wrapped in rice paper. They may contain a variety of fillings and may be deep fried. The technique for assembling and rolling nem is illustrated below.
Assembly

Select a single sheet of rice paper, and soak it briefly in water to soften.

Place desired filling at one side of the wrapper.

Roll the filling up partway in the wrapper.

Press the sides to flatten and seal in the filling.

Make the first fold in the sides.

Make the second fold in the sides.
-
Continue rolling all the way up.
