Nigerian plantain stew is a dish using ripe plantain and other stew ingredients.
Ingredients

- Onion, chopped
- Red bell pepper, chopped
- Garlic, minced
- Paprika (optional)
- Tomato, diced
- Vegetable broth
- Tomato paste
- Kidney beans
- Coconut milk (optional)
- Ripe plantain, sliced
- Lime juice
- Salt
- Pepper

[edit | edit source]- Heat a small amount of olive oil in a pot. Add the onion and red pepper, and cook for about 5 minutes until soft.
- Add the garlic and paprika, and continue cooking for about a minute.
- Stir in the tomato, vegetable broth, tomato paste, kidney beans, and coconut milk. Cook for 25 minutes.
- Heat some olive oil in another pot. Add the sliced plantain, and cook for about 5 minutes until the plantain is soft. Remove the plantain and transfer to a plate.
- After the stew has simmered for 25 minutes, remove from heat. Add lime juice, olive oil, salt, and pepper.
- Serve.
