Potato porridge is a dish from the Igbo people of Nigeria.
Ingredients
[edit | edit source]- Irish potato, peeled and cubed
- Water
- Vegetable oil
- Pumpkin leaves (ugwu), sliced
- Onion, sliced
- Chile pepper, sliced
- Seasoning cubes
- Iodized salt
Equipment

- Bowl
- Knife
- Frying pan
Procedure
[edit | edit source]- Rinse the potato pieces, and transfer them to a pot. Cover with water, and bring to a boil. Simmer for 10 minutes until potato is tender. Set aside.
- Heat the oil in a pan. Add the sliced pumpkin leaves, onions, peppers, seasoning cubes, and salt.
- Stir in the boiled potato. Cook for 5 minutes.
- Remove from the heat, and serve.
