Potato and fish porridge is a savory Nigerian porridge containing vegetables and fish.
Ingredients
[edit | edit source]- Irish potatoes, peeled and diced
- Small red onion, sliced
- Black pepper, ground
- Fish
- Palm oil
- Salt
- Seasoning cube
- Spinach or garden egg leaves, washed
Procedure
[edit | edit source]- Place the potato pieces, sliced onion, and pepper in a pot. Cover with water, then top with the fish.
- Bring to a boil, and simmer until one side of the fish is cooked. Flip the fish over, and allow the other side to cook.
- Remove the cooked fish from the pot, and set aside.
- Stir the palm oil, salt, and seasoning cube into the pot. Cover, and simmer until the potato is tender and the mixture has thickened into a porridge.
- Stir in the cooked fish and spinach, and serve.
