This recipe for eggs and potatoes makes a light breakfast or other simple meal.
Ingredients

- Potatoes, finely diced
- Onion, finely diced
- Garlic powder
- Tomatoes, finely diced
- Bell pepper, finely diced
- Stock cube
- Thyme
- Nigerian curry powder
- Salt
- Eggs
- Green bell peppers, finely sliced

- Frying pan
- Knife
- Spoon
Procedure
[edit | edit source]- Heat a thin layer of oil in a hot pan. Add the diced potatoes, and stir for 2 minutes.
- Add onion and garlic powder, and stir for 2 minutes.
- Add the tomatoes and peppers. Cover the pan and cook for 3 minutes, stirring occasionally.
- Stir in the stock cube, thyme, curry powder, and salt.
- Crack the eggs directly on top of the potato mixture. Gently shake the pan to move the eggs to all sides, but do not stir.
- Cover the pan, and cook until the eggs are set and no longer runny.
- Remove from the heat, and serve with sliced green bell peppers.
