Ingredients

- Salt
- Bell pepper
- Tomatoes
- Red chile peppers
- Groundnut oil
- Onion, chopped
- Water
- Stock cube
- Meat or fish

[edit | edit source]- Boil the rice in water for about 10 minutes. Drain the rice in a sieve, and rinse to remove excess starch.
- Return the rice to the pot. Add a little water and a pinch of salt. Let cook on low heat until the water is absorbed and the rice is tender, adding more water if necessary. Set aside.
- Blend the peppers and tomatoes together until smooth. Transfer to a pot, and cook over medium heat to reduce some of the liquid. Remove from the heat.
- Heat a little groundnut oil in a second pot. Add the onion and fry for 1 minute.
- Transfer the pepper-tomato mixture to the onions. Cook without stirring over low heat for 10 minutes.
- Add water, stock cube, salt, and meat. Let boil until the meat is cooked.
- Serve the stew with the rice.
