Sultan chips are a northern Nigerian delicacy made by cooking fried potatoes with vegetables.
Ingredients
[edit | edit source]- Irish potatoes
- Carrot, peeled and diced
- Green peas
- Vegetable oil
- Onion, sliced
- Egg
- Stock cube
- Salt
- Minced meat
- Scotch bonnet chili pepper, blended
- Green beans, cut into pieces
- Cucumber, diced
Procedure
[edit | edit source]- Cut the potatoes into batons the shape and size of chips (french fries).
- Deep fry the potato batons until cooked through.
- Boil the diced carrot and peas in salted water until tender. Drain and reserve.
- Heat a thin layer of vegetable oil in a pan over medium heat. Add the onion and stir until golden brown.
- Add the fried potatoes, and stir for a few seconds.
- Beat the egg with stock cube and a pinch of salt. Add to the potatoes in the pan, and stir.
- Add the minced meat and blended pepper. Stir for a while.
- Stir in the carrot, green beans, peas, and cucumber. Cook for a few minutes, then remove from the heat.
- Serve hot with fruit juice.
