  1. Cover the tiger nuts with 2 cups of the water, and allow to soak for 1 day.
  2. Blend together the soaked tiger nuts, dates, and ginger to form a paste, adding water as necessary.
  3. Thin the paste with water to the desired consistency, and sweeten to taste.
  4. Serve cold.
