Tiger nut milk, also known as kunnu aya, is a typical Nigerian beverage consumed commonly in the north of the country.
Ingredients

- 4 cups water
- 2–3 dates (optional)
- 1-inch (2.5 cm) piece of fresh ginger, peeled
- Sweetener of choice, to taste
Procedure
[edit | edit source]- Cover the tiger nuts with 2 cups of the water, and allow to soak for 1 day.
- Blend together the soaked tiger nuts, dates, and ginger to form a paste, adding water as necessary.
- Thin the paste with water to the desired consistency, and sweeten to taste.
- Serve cold.
