Nigerian vegetable rice is a rice recipe with lots of leafy greens. It can be served with chicken, beef, and more.
Ingredients

- Dryfish, washed
- Salt
- Fresh pepper
- Onion
- Vegetable oil
- Chopped onion
- Stockfish
- Stock cube
- Cameroon pepper
- Salt
- Green leaf, rinsed
- Uziza leaves, rinsed
- Scent leaves, rinsed

[edit | edit source]- Rinse the rice, and drain well.
- Boil the rice until half-cooked, then drain. Rinse well and set aside.
- Combine dryfish, salt, fresh pepper, and onion in a pot. Add a little water, and cook until the fish is soft.
- Heat a thin layer of vegetable oil in a clean pot. Add the chopped onion, and cook for a few minutes.
- Add the cooked rice, stockfish, stock cube, cameroon pepper, and salt.
- Mix in the green leaf, uziza leaf, and scent leaf, then top with the dryfish. Cover and cook until the rice is cooked through.
- Remove from heat and serve.
