Ofada rice is a type of rice grown locally in Nigeria. This recipe uses the rice to cook fried rice.
Ingredients
[edit | edit source]- 2 cups uncooked Ofada rice
- Salt
- Onions, chopped
- Groundnut oil
- Carrots, diced
- Bell peppers, diced
- Green beans, chopped
- Spring onions, chopped
- Prawns, rinsed
- Cinnamon
- Nutmeg
- Nigerian curry powder
- Thyme
- Sausages, diced
Procedure
[edit | edit source]- Rinse the rice very well with salt and warm water until the water you are using to rinse is clear.
- Boil the rice and some chopped onions in water for 15 minutes until it the rice is about half-cooked.
- Drain the rice and onions in a sieve.
- Heat some groundnut oil in a pot, and add some chopped onion. Stir well for a minute or two, then add the carrots, bell pepper, green beans, and spring onions.
- Add the prawns, cinnamon, and nutmeg. Stir fry for a few minutes.
- Add a little water, then the curry powder and thyme. Bring to a boil, and add the rice and sausages.
- Cover the pot and cook until the rice has absorbed the liquid.
