Ofada rice is a Nigerian food that can be cooked in different ways.
Ingredients

- Onions, diced
- Red bell pepper
- Fresh tomatoes
- Ginger (optional)
- Groundnut oil
- Green bell pepper, diced
- Green beans, diced
- Sausages (optional), diced
- Carrots, diced
- Spring onions, chopped
- Prawns, rinsed
- Cinnamon
- Nutmeg
- Nigerian curry powder
- Thyme
Procedure
[edit | edit source]- Rinse the rice until the water runs clear.
- Bring a pot of water to a boil. Stir in the rice and some diced onions. Cover, and simmer for 15 minutes.
- Drain the rice in a sieve.
- Grind together the red bell pepper, tomatoes, onion, and ginger.
- Heat a thin layer of groundnut oil in a pot, and add some diced onions. Stir well, and add the green bell pepper, green beans, sausages, carrots, spring onions, prawns, cinnamon, and nutmeg. Cook for a few minutes, stirring.
- Stir in the ground tomato mixture, as well as the curry powder, thyme, and a little water. Bring to a boil and season with salt.
- Stir the drained rice into the sauce, cover, and cook until the liquid is absorbed.
