This spicy garlic oil is nice for frying chicken, fish, and fries.
Ingredients
[edit | edit source]- ½ gallon flavorless high smoke point oil, such as canola, peanut, safflower, grapeseed, or soybean
- 40 cloves garlic
- 8 Thai bird chiles, stemmed and halved
- ½ tsp salt
Procedure
[edit | edit source]- Combine all ingredients in a large stockpot.
- Heat over low heat for 1 hour.
- Strain, cool, and store in the refrigerator until oil smells off, looks smoky, or tastes rancid.
