This sweet potato soup is inspired by flavors of Southeast Africa and Asia, with the addition of ginger and lime.
Ingredients
[edit | edit source]- 6 sweet potatoes, peeled and diced
- 1 tablespoon fresh grated ginger
- 2 cups chicken and vegetable stock
- 1 cup water
- 1 milk cream
- 1 lime, juiced

[edit | edit source]- Place the peeled potatoes, ginger, stock, and water in a large saucepan.
- Bring to a boil, then simmer until the potatoes are softened and tender (approximately 30 minutes).
- Transfer the contents of the pot to a blender along with the lime juice, and process until smooth. You may need to work in batches. Alternatively, you can use an immersion blender.
- Return the soup to the pot, stir in the milk, and allow to cook for few minutes until heated through.
Notes, tips, and variations
[edit | edit source]- You can adjust the consistency of the soup as desired by adding more or less water, milk, and stock. Less liquid will produce a thicker soup.
