Sydney Smith's salad dressing is a type of salad dressing. The recipe originated from Sydney Smith who founded the Edinburgh Review, and it was popular in the 19th century among American cooks.

Ingredients

• 2 boiled potatoes
• 1 spoonful mustard
• 2 spoonfuls salt
• 4 spoonfuls olive oil
• 2 spoonfuls vinegar
• 2 hard-boiled egg yolks, mashed
• Small amount of minced onions
• 1 spoonful anchovy sauce

Procedure

1. Pass the potatoes through a sieve or a ricer.
2. Combine potatoes and remaining ingredients. Mix well.
