Tahu Gejrot is a traditional dish from Cirebon, West Java, Indonesia. This dish is made from the main ingredient of fried Sumedang tofu or tofu pong, drizzled with a sweet and sour sauce and crushed chili peppers. Then, the sweet and sour sauce is made from palm sugar and tamarind. The flavor of Tahu Gejrot is both spicy and refreshing.

Ingredients

  • 15 pieces of Sumedang tofu or tofu pong
  • 12 red or green bird's eye chilies
  • 3 cloves of garlic
  • 4 shallots
  • 100 grams of palm sugar, thinly sliced
  • 3 tamarind pods
  • 4 tablespoons of sweet soy sauce
  • Salt to taste
  • 300 ml of boiled water

Procedure

  1. Prepare all the ingredients.
  2. Grind the bird's eye chilies, garlic, and shallots, then set aside.
  3. Combine the palm sugar, tamarind, and water. Boil the mixture until all the ingredients dissolve.
  4. Pour the boiled palm sugar and tamarind water over the ground chili, garlic, and shallots. Mix well until evenly combined.
  5. Cut the tofu diagonally, then press lightly until the center of the tofu is slightly crushed.
  6. Arrange the tofu on a plate, then drizzle with the spicy and sweet sauce.
  7. Tahu Gejrot is ready to be served.
