Tostón is a Venezuelan vegetable side dish of fried plantain. These can be served hot or at room temperature with a dipping sauce or salsa as an appetiser or plain as an accompaniment to a main course.

  1. Heat the oil in a deep fat fryer to 180°C / 350°F.
  2. Slice the plantain very thinly, then fry in the hot oil until golden brown.
  3. Remove from the oil, and when cool enough to handle, sprinkle with salt and flatten each slice with a mallet until very thin.
  4. Reheat the oil until very hot, then fry the flattened plantain slices until crisp and golden on both sides. Drain on absorbent paper.
