Procedure

[edit | edit source]
  1. Lay a lumpia wrapper on your work surface. Arrange a piece of banana and jackfruit in a line down the center.
  2. Fold the sides of the wrapper towards the center, then roll everything up. Brush the overlapping end of the wrapper with a little water, then press against the roll to seal.
  3. Repeat the filling and rolling steps to make a total of 10 rolls.
  4. Heat an inch of oil in a pan over medium heat. Add the rolls and fry until golden brown on all sides.
  5. Remove from the pan, and let any excess oil drain.
  6. Add the sugar to a heavy-bottomed pan. Carefully heat over medium heat, stirring periodically, until the sugar is fully melted. Make sure not to let it burn.
  7. Remove the melted sugar pan from the heat. Immediately add the rolls to the pan and turn to coat with caramelized sugar.
  8. Remove the rolls from the sugar and serve.
