Tuwon dawa is a type of Nigerian swallow common in the north of the country. It is made from sorghum flour, which gives it its brown color and nutritional profile. Tuwon dawa can be served with any soup, but is best with draw soups.
Ingredients

- Potash (kaun)
- Water
Procedure
[edit | edit source]- Wash the sorghum and spread it out flat to dry out completely. Make sure it is protected from dirt and debris.
- Grind or pound the sorghum to make a fine powder. Sieve this sorghum flour to remove the chaff.
- Bring a pot of water to a boil.
- Prepare a semi-thick batter using the sorghum flour and some water. Stir the batter into the pot of boiling water.
- Stir in the potash, and continue cooking until thickened.
- If you want a thicker mixture, stir in additional sorghum flour, mixing well to prevent lumps.
- Serve.
