Ukodo is a peppery yam and plantain soup native to the Isoko and Urhobo people of Nigeria. In Nigeria, it is very affordable and accessible because all the ingredients can be bought easily in the market. The soup can be either thick or watery, depending on preference.
Ingredients
[edit | edit source]- Yam, peeled and cut into chunks
- Unripe plantain, peeled and cut into chunks
- Pepper soup spice
- Cameroon pepper
- Scent leaf (efirin)
- Goat meat, cut in small pieces
- Vegetable oil
- Stock or seasoning cube
- Salt to taste
Procedure
[edit | edit source]- Rinse the yam and plantain chunks.
- Bring a pot of water to a simmer—use less water for a thicker soup, and more water for a thinner one.
- Add the pepper soup spice, Cameroon pepper, and scent leaf.
- Add the goat meat and vegetable oil. Cover the pot, and let simmer for about 5 minutes.
- Add the yam and plantain pieces, as well as the seasoning cube. Cook until the vegetables are tender.
- Adjust seasoning with salt, and serve.
