Yamarita is a Nigerian dish of battered and fried yam.
Ingredients
[edit | edit source]- Yam, peeled and sliced into rectangles
- Eggs
- Pepper
- Salt
- Seasoning cubes
- Flour
- Thyme
- Curry powder
- Vegetable oil
Procedure
[edit | edit source]- Rinse the yam pieces in water.
- Bring a pot of water to boil. Add the yam pieces, and boil for a few minutes until the yam is tender.
- Drain the yams.
- Combine the eggs, pepper, salt, and seasoning cubes.
- Combine flour, thyme, and curry. Stir this mixture into the eggs. Add a little water as needed to get a thin batter.
- Heat vegetable oil in a deep pot. Aim for about 350–375°F.
- Dip the yam pieces in the batter, and transfer the battered pieces to the hot oil. Fry until golden brown on all sides.
- Remove yamarita from the oil with a slotted spoon, and drain any remaining oil.
- Serve hot.
