Ingredients

  • 1 tsp. dried mustard
  • 3 T. sugar or Splenda
  • 2 T. canola oil
  • 1 tsp. minced peeled fresh ginger, or ¼ tsp. ground (I skip the ginger cuz I don’t like ginger)
  • ¼ cup soy sauce
  • 2 T. toasted sesame oil
  • 6 T. rice vinegar
  • 2 bags coleslaw mix
  • 4 scallions
  • 1 red pepper, chopped

Procedure

In a large bowl combine mustard, splenda/sugar, oil, ginger, soy sauce, sesame oil, and rice vinegar. Mix well. Add the coleslaw, scallions, and pepper. Cover and store in the fridge to chill before serving. (Can be made a day or 2 ahead of time.)
