Nigerian assorted cow tail pepper soup is a type of Nigerian pepper soup made with cow liver, muscle, feet, and heart. It is usually eaten in eastern Nigeria, where it can be found in most eateries and restaurants.
Ingredients
[edit | edit source]- Assorted cow parts (heart, liver, meat, foot), washed
- Salt
- Curry powder
- Thyme
- Onion, sliced into rings
- Stock cube
- Chile pepper, ground
- Ground crayfish
- Pepper soup spice
- Uziza leaves

[edit | edit source]- Combine the cow foot, salt, curry powder, and thyme. Add enough water to cover the meat. Cover the pot, and simmer for 35 minutes.
- Stir in the cow heart, and cook for 15 minutes.
- Stir in the meat and liver, adding more water as necessary to cover the meat.
- Stir in the onion and stock cube, and simmer for 15 minutes.
- Stir in the ground pepper, ground crayfish, pepper soup spice, and uziza leaves. Mix well, and simmer for 10 minutes until all the meat is soft and tender.
- Remove from the heat, and serve.
