Akidi is a typical Igbo food made from black beans. It is served with pap, custard, or garri.

Procedure

  1. Soak and rinse black beans.
  2. Boil beans for a few minutes until soft.
  3. Drain black beans, and mix in some palm oil and salt to taste.
  4. Mix in blended pepper and onions, then cook the bean mixture for a few minutes.
  5. Serve with pap or Nigerian custard.
