Igbindodo is a Nigerian dish of igbin (snail) and dodo (fried plantain). It is served in special occasions and parties.
Ingredients

- Red bell peppers
- Seasoning cubes
- Ground chili pepper
- Tomatoes
- Scotch bonnet chile peppers (ata rodo)
- Onion
- Vegetable oil
- Ripe plantains, peeled and diced
- Carrots, diced
- Red and green bell peppers, diced
- Salt
Procedure
[edit | edit source]- Wash the snail meats, and cut them into two longitudinal halves.
- Combine the snail meats with tatashe pepper, ground pepper, and seasoning cubes. Let marinate for at least 20 minutes.
- Heat some oil in a pan. Add the diced plantain, and fry until golden brown. Remove from the oil.
- Add the marinated snail to the pan, and fry. Remove from the oil.
- Blend the tomatoes, scotch bonnet peppers, and onion to a paste.
- Heat some of the leftover oil in a pot. Add the tomato-pepper paste and seasoning cubes. Cook for a while.
- Add the cooked snail. Allow to cook until the liquid has evaporated.
- Add the carrots, then the peppers. Remove from the heat.
- Gently fold in the fried plantains to avoid mashing them. Adjust the salt to taste.
- Serve hot with fruit juice.
