Maafe is a stew made from groundnuts. It originated from the Madinkwa and Bambara people of Mali.

Procedure

  1. Boil meat in a pot with salt and onion.
  2. Fry the meat in a pan of oil.
  3. Blend together the tomato, pepper, and garlic until smooth.
  4. Pour the blended mixture into a pot and add the peanut paste. Stir until thick.

  • Maafe is usually eaten with white rice, tuwo, fonio, fufu and sweet potatoes
  • It is usually made with vegetables in Ivory Coast, and the stew is cooked with boiled egg in Ghana.
  • When using beef to make maafe, use chuck, short ribs, or oxtail.
