Princess cake or prinsesstårta is a layered cake filled with cream and topped with marzipan.

  1. For the vanilla cream, combine the cream, yolks, cornstarch, and sugar. Heat over a double boiler to just below cooking point. Whip it for a while as it is bubbling (but not boiling). Let it cool off for some minutes and then mix in the vanilla powder.
  2. Put the vanilla cream between the layers of cake. Frost the top of the cake with the whipped cream, shaping the top to make it thick and domed. If you want to have jam in the cake, replace one of the layers of vanilla cream with jam.
  3. Cover the whole cake with the marzipan like on the picture and dust the top with powdered sugar.
  4. Chill until serving.

  • Sweet cake layers can be bought ready. If you use them, the cake will take much less time to make (if you want to bake cake layers, the time to make the cake will probably double). The same goes for marzipan, and you may be able to buy an already-flattened piece of marzipan.
